Creamy and comforting, great for summer or holidays
Start by cooking bacon
in a large pot - and keeping the grease
Sauté onion in the bacon grease, 5 minutes
Add peeled, diced potato and water, cook for 10 minutes, until tender
Add milk then use an immersion blender, blender or masher to slightly puree the potatoes
Add remaining milk, corn, sugar, butter, salt and pepper; simmer 5-10 more minutes
Hearty, thick, creamy and so delicious!
Serve with reserved bacon and chopped chives
(and hot sauce if desired)
