Toast the cashews in the oven for 5 min. Let cool to get crispy.

Season cut chicken thighs (or breasts) with salt and pepper

Cook chicken in 2 batches until browned

Return all chicken to pan, add garlic and scallions then rice vinegar

Add sauce: Water, cornstarch, hoisin sauce and soy sauce

Stir in cashews, sesame oil and remaining scallions

Done! It's ready to serve!
