Ingredients
1tablespoonextra-virgin olive oil
1tablespoonunsalted butter
1 ½lbs.boneless, skinless chicken breasts, cut into 1-inch strips
¾teaspoondried Italian seasoning
¾teaspoonkosher salt
½teaspoonblack pepper
2clovesgarlic, minced
¼cuplow-sodium chicken broth
Zest and juice of 1 lemon
Instructions
Season the chicken strips with Italian seasoning, salt and pepper.
Heat oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes on one side, then flip and cook an additional 2-3 minutes.
Add the garlic, broth, and lemon zest and juice to the pan.
Lower the heat to medium and simmer until the chicken is cooked through, an additional 2-3 minutes.
Serve with sauce drizzled over the top and enjoy!

This helps them cook more quickly - and evenly - in the pan and speeds up the dinner.You could certainly substitute chicken thighs if you prefer, but you’ll need a longer cooking time.Lemon: Lemon zest and fresh lemon juice are necessary here; this dish won’t taste the same if you use bottled lemon juice.Herbs: Feel free to sprinkle some fresh chopped herbs, such as parsley, over the cooked chicken if desired.Butter: Also, if you want some extra richness, you can add an additional tablespoon of butter to the sauce just before you remove it from the heat.
