Notes
Rice: You can use brown or white rice, whichever you prefer. (Note: brown rice will take a bit longer.) You could also swap in some instant rice or freezer rice to make these even quicker and easier. Or try these bowls with orzo or couscous. If you want a low-carb option, swap in some extra greens as the base instead of rice or use cauliflower rice.Chicken: We like using the full 3 cups of chicken for a protein boost but you can make it stretch with 2 cups of chicken for 4 people. If you only have raw, boneless skinless chicken breasts and want to cook them for this recipe, here's what I recommend: cut the chicken into ½ inch cubes. Season with salt, pepper and dried oregano. Cook the chicken over medium heat in a skillet with some olive oil. Add the zest of one lemon and 1 tablespoon of lemon juice to the skillet at the end then proceed with assembling the bowls.Leftovers: These bowls are great for making in advance. Keep the rice and chicken separate so they can be heated in the microwave. Have the other ingredients prepared and ready to be added. Everything will keep for up to 4-5 days.
