Instant Pot shredded chicken is just a few simple ingredients and ready in 30 minutes, start to finish. This tender, flavorful chicken is great for tacos, enchiladas, salads, sandwiches, grain bowls and more!

Ingredients
2lbs.boneless, skinless chicken breasts
1teaspoonkosher salt
½teaspoonblack pepper
½teaspoongarlic powder
Instructions
Add 1 cup of water to the bottom of the Instant Pot insert. Place the trivet in the Instant Pot.
Season the chicken on both sides with the seasonings then place on the trivet in the Instant Pot. Seal the pot.
Set the Instant Pot to cook on high pressure for 8 minutes. (If you are using frozen chicken breasts, increase this to 10 minutes.)
Once the cook time is complete, move the valve to quick release.
Once the pot is safe to open, remove the chicken breasts and shred using two forks (or a stand mixer).
Use immediately or let cool and refrigerate for up to 5 days or freeze for up to 5-6 months.
Notes
The recipe calls for boneless, skinless chicken breasts. You could substitute bone-in chicken breasts or chicken thighs, but you’ll need to adjust your cooking times slightly.I highly recommend using a digital thermometer to check the temperature of your chicken. (Reminder: it should be 165.) If yours didn’t cook all the way through for some reason, re-seal the pot and cook for another 2 minutes on high pressure.
