Roasted maple cinnamon sweet potatoes are sliced in rounds and baked with maple syrup and cinnamon for an easy, delicious side dish!

Ingredients
3medium sweet potatoes, scrubbed, peeled and cut into ¼-inch rounds
2tablespoonspure maple syrup
1teaspoonground cinnamon
½teaspoonkosher salt
Instructions
Preheat oven to 400. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
Place sweet potato rounds on cookie sheet.
Brush the tops of the sweet potatoes generously with maple syrup, then sprinkle with cinnamon and salt. I put the maple syrup in a little bowl then use a small pastry brush to brush it onto the sweet potatoes. You might not need all of the syrup or cinnamon - just brush and sprinkle until you've covered each round.
Roast at 400 for 20 minutes or until tender. Enjoy!
