Total Time10 minutesmins
Yield: 10-12 balls
Ingredients
1 ½cupswalnuts
1cupdates, pitted and chopped
¼cupunsweetened cocoa powder
1tablespoonhoney or maple syrup
1teaspoonpure vanilla extract
Pinchof sea salt
Instructions
Place the walnuts in a large food processor fitted with a standard blade. Pulse several times until broken down. The walnuts should be in small crumbles.
Add the chopped dates, cocoa powder, honey or maple syrup, vanilla and salt to the food processor. Process until well combined and the mixture begins to clump, about 30-35 seconds.
Wet your hands lightly with water then scoop up about 1 ½ tablespoons of the dough at a time and roll into a firm ball in your hands. Repeat until all of the brownie bites have been made. (You can rinse your hands and then lightly rewet halfway through if needed.)
Enjoy immediately or chill before eating. Extra brownie bites will keep in the refrigerator, stored in a covered container, for up to a week.
Notes
I strongly advise taking the time to cut up your dates after you remove the pit. It helps them break down more easily in the food processor without clumping and sticking to everything and not getting chopped. You can use honey or pure maple syrup as the sweetener for this recipe. I’ve made them both ways and they are equally delicious. Or you can try them with agave syrup if that's what you have.(You can try making these without any of those added sweeteners but even with very sweet dates, I find the recipes needs that extra sweetness to be well balanced. And it's just 1 tablespoon.)You can easily double or triple the recipe if you are making these brownie bites as a snack for a bigger group.
