Sweet potato pie is creamy, sweet, lightly spiced and baked in a buttery, flaky pie crust for a classic dessert. It’s made with simple ingredients and is sure to be a favorite at your holiday table.

Ingredients
3medium sweet potatoes (about 1 ½ lbs)
½cupunsalted butter, melted
1cupgranulated sugar (or ¾ cup light brown sugar, packed)
½cupmilk (whole, skim or evaporated)
2large eggs, lightly beaten
1 ½teaspoonsvanilla extract
½teaspoonground cinnamon
½teaspoonground nutmeg
¼teaspoonsalt
2(9-inch) pie crusts (thawed if frozen)
Instructions
Preheat oven to 400. Line a baking sheet with aluminum foil or parchment paper. (This catches any spills and makes it easier to get the pies in and out of the oven.)
Scrub the sweet potatoes and poke with a fork. Place on the baking sheet. Bake at 400 for 1 hour, or until tender. Reduce oven temperature to 350.
Once cool enough to handle, remove the sweet potato skins and add the potato to a large bowl. Mash with a fork.
Add the butter, sugar, milk, eggs, vanilla, cinnamon, nutmeg and salt and stir until well mixed.
Divide the sweet potato mixture between the two pie crusts. Place the pie crusts on a parchment paper lined baking sheet.
Bake at 350 for 55 minutes to 1 hour.
Remove the pies from the oven and allow to cool completely. Slice and serve.

Sweet potatoes: You’ll need 3 medium sized sweet potatoes for this recipe. If yours are on the small side, go with 4. We have to bake them until nice and soft and tender and then we mash and whip them up with the remaining ingredients.Yield: This recipe makes TWO sweet potato pies. This is generally a great thing for the holidays when we have bigger crowds to serve. You could also halve the recipe to just make 1 pie, or you could try substituting a deep dish pie pan and filling it most of the way. It’ll just need to bake longer to cook through.Please plan ahead because it takes about 1 hour to bake the sweet potatoes and then after you assemble the pie, it bakes for 1 hour and then needs to cool.Topping ideas: Sprinkle of cinnamon, dusting of powdered sugar, spread of marshmallow fluff (can broil briefly to brown it), mini marshmallows around edge, whipped cream, etc.See the written post above for details on storing or freezing the pie and how to make it ahead.
