Curried ground chicken skillet with mushrooms, spinach and diced tomatoes is a flavor-packed and healthy one-pot dinner ready in just 20 minutes!

Ingredients
1teaspoonextra-virgin olive oil
1small onion, diced small
1(8 oz) container cremini mushrooms, diced
2clovesgarlic, minced
1lb.lean ground chicken (I use 90% lean)
1tablespooncurry powder or garam masala
1teaspoonground cumin
1teaspoonground coriander
1teaspoonkosher salt
½teaspoonturmeric
½teaspoonground ginger
1(14.5 oz.) can diced tomatoes (undrained)
2cupsfresh baby spinach
For serving:
¼cupchopped fresh parsley or cilantro
Chopped peanuts (optional)
Steamed white or brown rice (see notes)
Instructions
Heat a large skillet over medium heat and add olive oil.
Add onion and mushrooms and sauté for 5 minutes, until softened. Add garlic and cook another minute.
Add ground chicken to the pan and cook until cooked all the way through, about 7-8 minutes, breaking it up with a spatula as it cooks.
Add the curry, cumin, coriander, salt, turmeric and ginger and stir well to combine.
Stir in the tomatoes and spinach until warmed through and lightly wilted, 2-3 minutes.
Serve the curried chicken over steamed rice. Sprinkle with fresh parsley or cilantro and peanuts, if using, and enjoy!

Notes
Serving ideas: Serve as is, or with cauliflower rice, for a low-carb meal. Or serve over steamed brown or white rice (that’s my go-to way). You could also pair with some warm naan or pita bread or serve this ground chicken mixture over baked sweet potatoes.Leftovers: Once cooled, store in a covered container in the refrigerator for up to 4-5 days. Reheat in the microwave until heated through.
