Ingredients
3-4(6 oz.) chicken breasts, cut into large strips or chunks
Salt and black pepper, to taste
1teaspoonextra-virgin olive oil
4creamy Swiss cheese wedges (such as Laughing Cow, see notes)
⅔cuplow-sodium chicken broth
Instructions
Season chicken strips or chunks with salt and black pepper.
Heat oil in a large pan over medium-high heat.
Add chicken and sear on both sides until browned, about 2-3 minutes per side.
Add cheese wedges and chicken broth, scraping up any stuck-on bits on the bottom of the pan.
Reduce heat to medium-low and cook until the cheese has melted, the sauce has thickened and the chicken is cooked through, about 5 minutes.
Serve chicken with extra sauce drizzled over the top. Enjoy!
Notes
I use Laughing Cow cheese wedges for this recipe. However, you could also substitute a plain or flavored goat cheese. (You'll need about 4 oz.) Or you could use a combination of plain cream cheese, Swiss or mozzarella cheese and cheddar cheese.This is great served over a baked potato, mashed potatoes, polenta or grits, or steamed rice or couscous. Anything that you can drizzle some of the extra sauce over!
