Healthy spinach dip is warm, creamy and cheesy and delicious for a lightened up appetizer. Serve with chips, crackers, bread or veggies for scooping.

Ingredients
10oz.frozen spinach, thawed and squeezed dry
⅔cupnonfat plain Greek yogurt
⅓cuplow-fat mayonnaise
⅓cupgrated Parmesan cheese
2green onions, chopped (about ¼ cup)
1clovegarlic, minced
½teaspoonkosher salt
¼teaspoonblack pepper
1cupshredded mozzarella cheese
For serving:
Tortilla chips, crackers, baguette slices, fresh veggies, etc.
Instructions
Preheat the oven to 375 degrees Fahrenheit. Spray a 1 ½ quart baking dish with cooking spray and set aside.
In a large bowl, combine the spinach, Greek yogurt, mayonnaise, Parmesan cheese, green onions, garlic, salt and pepper. Mix very well.
Transfer the spinach mixture to the casserole dish and smooth into an even, thin layer. Top with the shredded mozzarella cheese.
Bake at 375 for 20-25 minutes, until bubbly and warm and browned on top.
Serve hot and enjoy!

Spinach: Your spinach needs to be thawed and squeezed dry for this recipe, so please plan accordingly. You can thaw frozen spinach quickly in a colander (with small holes so it doesn't fall through) under running water. Just be sure to let it set for a few minutes and squeeze it really, really well to remove the excess moisture.Greek yogurt: You can use nonfat plain Greek yogurt or a 2% or 5% version.Mayonnaise: You can use regular or low-fat mayo for this recipe, whatever you have on hand. You could also try substituting extra Greek yogurt in place of the mayo, but it may affect the creaminess of the dip.Onions: This recipe calls for a couple of green onions. You could also use a regular onion, but it would need to be sautéed in a little olive oil until softened before you add it.Mozzarella: The dip is topped with mozzarella cheese. You could also try this with a shredded Italian blend cheese if you prefer.Make-ahead tips for healthy spinach dip:
You can make and assemble the entire dish ahead of time. Mix everything, put it in your baking dish and top with the cheese. Cover and refrigerate for up to 1-2 days.
Pull the baking dish out of the refrigerator as you preheat the oven.
Bake as directed, adding an extra 5 minutes as needed to make sure everything gets nice and hot and melted.
