Instructions
Place the chicken breast in the middle of a cutting board.
Place one hand on the top of the chicken breast and use the other hand to guide a sharp knife horizontally through the middle of the chicken breast, but do not slice all the way through. You should leave the far side attached. If you can't do a single slicing motion, no worries, it's fine to use a series of shorter cuts.
Lift the top piece of the chicken up and over and lay it down flat on your board - sort-of like opening a book. You are all set to proceed with your recipe!
