Rainbow Toast

Rainbow toast is spread with cream cheese, drizzled with honey and then topped with fruits in all the colors of the rainbow for a fun breakfast!

Ingredients

  • 4 pieces whole wheat bread, toasted
  • β…“ cup plain cream cheese, divided
  • 4 teaspoons honey, divided
  • 4 large strawberries, thinly sliced
  • 1 mandarin orange, divided into segments
  • 1 medium banana, sliced
  • 12-15 green grapes, halved if desired
  • β…“ cup blueberries
  • ΒΌ cup pomegranate seeds

Instructions

  • Spread the cream cheese evenly over each piece of toast and drizzle with 1 teaspoon honey per piece.
  • Spread the fruit in a rainbow array: red, orange, yellow, green, blue, purple.
  • Serve and enjoy!

You can swap out some of the fruits if you prefer: kiwi for the green grapes, red grapes for the pomegranate seeds, blackberries for the blueberries, even pineapple for the banana. Make it your own!
