Rainbow Toast

Rainbow toast is spread with cream cheese, drizzled with honey and then topped with fruits in all the colors of the rainbow for a fun breakfast!

My kids were feeling left out of the toast craze so I made them a super fun, super colorful rainbow toast!

See, we don’t usually keep avocados around. Neither kid has ever really taken to them. So the avocado toast options weren't really working for us.

And of course they like toast. Usually with their cheesy eggs every Saturday morning. And sometimes with peanut butter for an afternoon snack. Anything with peanut butter.

But I wanted to give them a little something more in the way of toasty fun.

So I went with ALL the fruits!

They were so excited when they saw this rainbow toast.

M was like, “WOW Mommy!” Immediately followed by, "Can I have the whole thing?”

This fun breakfast or snack is perfect for celebrating St. Patrick's Day, too, in a festive way.

Plus, it's oh so simple to make.

The whole wheat bread is toasted, spread with cream cheese and drizzled with honey.

Then I used strawberries, mandarin oranges, banana, green grapes, blueberries and pomegranate seeds for the fruits and arranged them in the colors of the rainbow order.

This is very verstaile, too.

Use whatever kind of bread you love. White, wheat, sandwich, bakery - any of it will work.

You can also adjust and sub some of these fruits out. Try kiwi for the green grapes, red grapes for the pomegranate, blackberries for the blueberries, even pineapple for the banana, for instance.

We don’t always have all the colors of fruit, but we’re usually pretty close. These kids, man, they are little fruit monsters. #atleastitshealthy

And they are happy to be in on the toast trend fun.

Rainbow Toast

Rainbow toast is spread with cream cheese, drizzled with honey and then topped with fruits in all the colors of the rainbow for a fun breakfast!

Yield: 4 servings

Ingredients

  • 4 pieces whole wheat bread, toasted
  • ⅓ cup plain cream cheese, divided
  • 4 teaspoons honey, divided
  • 4 large strawberries, thinly sliced
  • 1 mandarin orange, divided into segments
  • 1 medium banana, sliced
  • 12-15 green grapes, halved if desired
  • ⅓ cup blueberries
  • ¼ cup pomegranate seeds

Instructions

  • Spread the cream cheese evenly over each piece of toast and drizzle with 1 teaspoon honey per piece.
  • Spread the fruit in a rainbow array: red, orange, yellow, green, blue, purple.
  • Serve and enjoy!

You can swap out some of the fruits if you prefer: kiwi for the green grapes, red grapes for the pomegranate seeds, blackberries for the blueberries, even pineapple for the banana. Make it your own!

    I love all the good vitamins packed into this fun breakfast - or snack- or even lunch! And the idea of honey and cream cheese together sounds really yummy!!!!!! What a great idea.

    I'm a big avocado fan, and I would trade in my avocado toast for these in a heartbeat! This is such a great and healthy breakfast, but I love that there is a little cream cheese in there for richness, so you know you'll feel satisfied when you are done.

      Yes Tracy! This really does fill you up - the cream cheese adds some heft and the whole grain bread gives some staying power, plus all the good natural sugars from the honey and the fruit. Hope you give it a try!

    Love this idea, Kathryn! Sometimes it's those simple little things that make all the difference when you're a wee one, like having pretty, colourful toast! My Mum used to do similar things with our food when my brother and I were little, and I still remember it all these years later. I think this toast would be fabulous for adults too - why should the kids have all the fun? 😛

    This is SUCH a great idea! I'm not a kid, and I totally want to make this for myself. I love doing toast with a schmear of cream cheese and a little bit of fresh strawberries, or strawberry jam, so I'm already halfway there!
