I am all about the EASY when it comes to cooking. I donโ€™t like to fuss much over my food and I certainly donโ€™t like to spend a ton of time in the kitchen at the end of a long day. I love a home cooked meal and we eat a ton of chicken, which means Iโ€™ve come up with and found a lot of easy chicken recipes over the years. And this collection highlights some of my easy chicken recipes in under 30 minutes, when you want something delicious but need it on the table pretty quickly. Is that every single night for you too? I find it supremely satisfying to go about my day, knowing that a delicious home cooked dinner is cooking up at home for me. I can play with the kids, take them to practices, run errands or just relax with a book and breathe easy. These slow cooker chicken recipes mean there is just one less thing to do in the evening and thatโ€™s a great thing on a busy day! Everything from one-pot veggie pastas to stuffed squash to chili to veggie burgers and hearty grain bowls and salads, there are meatless options here for everyone! I am a veggie lover through and through. ๐Ÿ’š๐Ÿ’š๐Ÿ’š I adore getting in as many vegetables as I can, throughout the day really, and I often make easy vegetarian dinners a couple of times a week. (Hello meatless Monday, Iโ€™m looking at you!) So over the years, Iโ€™ve created tons of great veggie-based meals that can stand on their own for lunch or dinner and be hearty and satisfying. And that are also mostlyย quick and easy, because I work as a health and nutrition editor and weโ€™ve got a busy family so cooking on a weeknight needs to be low-key. My one-pot vegetarian spaghetti has been a hugely popular recipe here on the blog and you guys canโ€™t seem to get enough of my grain bowls and salads. I’m Kathryn Doherty, the recipe creator, writer and photographer behind Family Food on the Table.

So, about me. I’m Kathryn, a former health and nutrition editor, mother of two kids, and devoted food and health nut. We live in Charlotte, N.C., and I am always in my kitchen fixing something. Or doing dishes. So many dishes…

I have a serious love of veggies, spicy food and apples. We eat oatmeal by the boat load and I use pumpkin year round. I’ve always got wine and bourbon on hand. Always.

And I’m so excited to share that I have a cookbook! It’s called Healthy, Quick and Easy Baby Food and it’s got absolutely everything you need to make homemade baby food, plus tons of toddler and little kid recipes that are yummy for the whole family. It also makes a great gift!

  • I have two chocolate labs, one very old and one very young. They are so sweet and fun! Here’s Dixie at the beach (a few years ago) and our new pup Sadie on her first birthday.

  • I went to college at Northwestern University (near Chicago) and majored in journalism.
  • I’m a big nerd. My dream job? Full-time student. Instead, I worked for more than 15 years as a health and nutrition editor so I could read news all day long. I left to focus full-time on this site and on bringing you more deliciousness. And on the side, I sometimes take Coursera classes on health, nutrition and science. They even have quizzes and grades! 🤓
  • I love books (goes with the nerdom). I love flipping through books, I love browsing for books, I love just looking at books. And of course, cookbooks! I especially like old community cookbooks.
  • Long walks are my jam. Really long. Mostly this takes place on my treadmill in the form of daily exercise, but beaches are even better when I can get there. I’ve also done the 2-day Avon 39.3 mile walk for breast cancer twice and loved every step. 💖

    Hi Kathryn! I just now discovered your website! Excellent! You are one funny lady! anyway, I found your recipe for Chicken Fajita Casserole, which I will be trying within a week or so, after I make a Chicken Fajita Soup. I’ve been into the fajita thing lately, go figure! I feel lucky to have also discovered your healthy Chicken Pot Pie recipe -the store bought ones are so loaded with sodium!
    Anyway, I love the color purple, too. A neighbor’s daughter started calling me Barney! How rude! Purple lovers unite!

    Kathryn, made your healthy chocolate pancakes. They were just what the doctor ordered. I mean, I have been looking for a wonderful cake, orange pastry, or something to snack on the last weeks.

    I often am out of one or two ingredients or am too tired to bake anything. So, I have long awaited this night!
    I used white flour, only because I did not have whole wheat on hand. I used coconut nectar because I didn’t have any natural maple or ginger syrup in the house as well. The consistency of the coconut nectar was like syrup and sweet and was sweet too. Anyway, it worked.

    p.s. I have been wanting to make orange rolls, ya know, like the refrigerator kind. I don’t want all the artificial things the makers put in them, so I never buy and go without. Do you have a recipe? I did not look already, if you do.

      Hi Dorothy, yes, I believe that calorie count and nutrition info is for a single meatball. We usually eat 2-3 (my kids sometimes go for a fourth!). Hope that helps!

    Hello,

    I only have settings of high for 4 to 6 hours and low for 8 to 10 hours. I am not home until 530ish. I put it on the low setting of 8 hours. Would I just turn it off when I’m home and eat at 630?

      Hi Kay, I’m not sure what recipe you’re asking about but it sounds like a low setting for the least amount of time might be your best bet. Would you like to comment on the recipe post instead of my About page? I might be able to help more.

    Just been looking at your range of easy recipes. One question on the Easy turmeric chicken can I leave out the cumin as I’m not a lover of that particular spice, and I have a ninja foodi which i use daily and hope I can cook this recipe in it?

    Nice easy to read and follow website and recipe selection.

      Hi, I haven’t tested that recipe without the cumin, but you could certainly try it. Also, I don’t have a ninja foodi or know any modifications that might be needed to adapt the recipe, but would love to hear if you try it. ๐Ÿ˜Š

        Good morning Kathryn
        I’m going to try the turmeric chicken today without the cumin and I will cook it in my Ninja Foodi. I did however cook the chicken pates yesterday in the Ninja Foodi using the air/crisp setting and they were perfect. They were brown and crispy on the outside and tender and juicy on the inside. No additional oil needed and they took just 10 minutes to cook.

    Hi there! I saw your honey garlic chicken and was wondering if I could leave the chicken in the sauce overnight before cooking it, so it can soak up the flavor? Or would it not be a good idea?

      Hi Ashley! I haven’t tried the sauce as a marinade, so I’m not sure whether an overnight soak would affect the texture of the chicken or not. Would love to hear if you try it!

    Found your Soy-Ginger Vinaigrette dressing recipe. We will be putting over our salad with seared bluefin tuna (that I caught off Cape Hatteras) tonight. And I always sing and dance in the kitchen. And have conversations with my deceased grandmother, who taught me to cook and can. My wife finds it hilarious.
