Welcome to March, my friends!
I’m not quite sure how we are into month three of the year, since it feels like 2020 just started, but I’ve got lots to look forward to this month, so I’m going with it.
We have the kids' spring break later this month, and we are going to Disney World!
Two years ago, we took them for the first time and this will be our second trip. They are excited to be able to do more rides and activities, and we’re all looking forward to the Star Wars attractions that have been added recently.
We’re also going to do a day at Universal to check out some of the Harry Potter world. Can you tell we’re big nerds in my house?!
We’ll end the week at the beach for a couple of days with my in-laws, and I think that downtime is going to be crucial for helping it seem like an actual vacation. (Disney is just exhausting. Amazing and magical, but it sure leaves you worn slam out!)
So anyway, I’m happy to welcome in the new month. And because it brings with it St. Patrick’s Day, and because my husband’s family is Irish, I wanted to get a little festive and share some fun green foods with you today!
These healthy green recipes include everything from breakfast to lunch, snacks and appetizers as well as some dinner main dishes and sides.
(And I gotta point out that the green eggs and ham recipe is especially appropriate for today, which is Dr. Seuss’ birthday.)
With all of this inspiration, I think you’ll find lots of way to celebrate!
One quick disclaimer: Many of these foods are fully green in color and appearance, but some of them have more discreet just hints or pops of green.
We’re not using any food coloring here, just natural foods, and that’s how things turn out sometimes. But I think you’ll find they are all delicious and fun!
