Slow cooker salsa verde pork is tender, flavorful and great for using in tacos, rice bowls, nachos and more!

Ingredients
2poundspork tenderloin, trimmed
1(12 oz.) beer (see notes)
1 ½teaspoonsground cumin
1teaspoonground coriander
1teaspoonkosher salt
½teaspoonblack pepper
1(16 oz.) jar salsa verde, divided
Instructions
Place pork tenderloin in the slow cooker. Pour the beer over the pork.
Mix together the spices in a small bowl. Sprinkle the tops of the pork with the spice mixture.
Spoon half of the jar of salsa verde over the pork (save the rest for later).
Cook on low for 6-8 hours or on high for 3 ½ to 4 hours.
Remove pork and shred with two forks. It should fall apart very easily.
Drain all but ½ cup of the liquid in the slow cooker. Then return the shredded pork to the slow cooker and add reserved liquid and remaining salsa verde. Stir to combine and let sit, covered, in the slow cooker on warm for 10 minutes to help the pork absorb the flavors.
Serve as tacos, rice bowls, quesadillas, nachos - however you like!
