Healthy granola muffins are 100% whole grain, naturally sweetened with no added sugar and make a perfect portable breakfast or healthy afternoon snack!

Ingredients
1 ½cupswhite whole wheat flour
1 ½teaspoonsbaking soda
¼teaspoonsalt
1cupplain nonfat yogurt
½cupunsweetened applesauce
½cuphoney
1large egg
1teaspoonvanilla extract
2cupsgranola, see notes
Instructions
Preheat oven to 400. Line a muffin tin with muffin liners. I also spray mine with cooking spray so they don’t stick. (Especially since this recipe doesn’t have butter or oil.)
Mix the flour, baking soda and salt in a large bowl.
In a separate bowl, mix the wet ingredients: yogurt, applesauce, honey, egg and vanilla. Stir well to combine.
Add the wet ingredients to the dry and stir to combine. Fold in the granola but be careful not to overmix.
Pour the batter into the prepared muffin tins, filling about ⅔ full.
Bake at 400 for 20-25 minutes, until done. Let cool then store in an airtight container at room temperature for up to a week. Freeze up to 6 months (see notes).
Notes
I use my easy 5-ingredient granola for these, but you can substitute your favorite kind of granola, homemade or store-bought.These muffins, like most, freeze beautifully! I wrap them individually in a piece of aluminum foil and then place in a freezer ziptop bag for storing.
