15 Minute BBQ Chicken Skillet

This 15 minute BBQ chicken skillet with corn, spinach and tomatoes, plus mozzarella and cheddar cheese, is perfect for a delicious, fast dinner!

Serve as is, with rice or potatoes, or use to make French bread pizzas or open faced hoagie rolls.

Maybe it's the Southerner in me, but I sure love some BBQ sauce on foods. 

Previously I've shared slow cooker pulled pork, BBQ salmon, Air Fryer BBQ chicken legs, BBQ turkey burgers with slaw and of course, BBQ chicken pizza.

Today, we're aiming for speed and making 15 minute BBQ chicken skillet.

It's got onion and pepper, corn, spinach, tomatoes, plenty of BBQ-coated chicken pieces plus both mozzarella and cheddar cheese to melt down on top.

It's cheesy, flavorful and so quick and easy to make! Perfect for a weeknight dinner on a busy night. (Aren't they all?)

OK, let's get cooking.

Ingredient Notes:

Onion: I like this with red onion - I think because that's traditional on a BBQ chicken pizza - but a regular onion would be fine, too.

Bell pepper: Green bell peppers are cheaper, so I like opting for that when it doesn't make a difference. However, any other color can be subbed here.

Corn: I keep a bag of corn in the freezer at all times. You could also use a small can of corn (yellow or white, doesn't really matter). Just be sure it's well drained.

Chicken: The chicken needs to be already cooked and ready to use for this recipe. You can use a rotisserie chicken or leftover grilled or baked chicken.

Tomatoes: Cherry tomatoes are available year round and reliably good. If you want to sub a regular or Roma tomato, feel free.

Lots of ways to adapt this recipe to use what you have on hand. Fast and flexible is a good combo!

OK, let's get to eating because that's where this recipe gets extra fun.

Serving IDeas:

Serve as is or over some steamed rice for a complete dinner.

Use this BBQ chicken mixture to make French bread pizzas. (My son's favorite!)

Or serve over hoagie rolls.

Pair with potatoes - baked or roasted or sweet potatoes. Use this mixture to stuff the potatoes or just serve alongside.

Use the chicken mix to make a wrap. (I love doing this with leftovers later in the week.)

So many options. I love that for a night when we're all coming and going. Everyone can sorta customize their own plate.

Ingredients

  • 2 teaspoons extra virgin olive oil
  • 1 small red onion, chopped
  • 1 medium green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen corn
  • Salt and black pepper
  • 3 cups chopped rotisserie chicken
  • ¾ cup BBQ sauce
  • 2 cups fresh baby spinach
  • 1 cup halved cherry tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • Juice of ½ lime

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and sauté for 5 minutes, until softened. Add the garlic and sauté for another 30 seconds, until fragrant.
  • Stir in the frozen corn. Season with salt and pepper.
  • In a small bowl, mix together the cooked, chopped chicken and the BBQ sauce until well coated. Add the chicken to the skillet and stir to mix in.
  • Add the spinach and tomatoes to the skillet and stir to combine and to wilt the spinach.
  • Top the skillet with both cheeses and let sit for 1-2 minutes to melt down. Finish with the juice of the ½ of a lime and serve immediately. (Serving ideas in the notes below.) Enjoy!

Notes

Leftovers: The leftover chicken mix, once cooled, can be stored in a covered container in the refrigerator. Reheat in the microwave until hot and then serve as desired.
