These 5-minute bowls of chicken and mashed potatoes with green peas and gravy use smart store-bought shortcuts to make a fast, cozy and delicious dinner!

Today is the second in what I hope to be a series of 5 minutes recipes. The first was this 5 minute chicken and rice bowl with veggies and cheese and all your favorite toppings.

Smart shortcuts for the win!

Today it's these 5 minute chicken and mashed potato bowls with green peas and gravy.

Just 4 ingredients and 5 minutes, but you'll be sitting down to a cozy bowl of comfort food goodness. And it's a whole dinner - you've got the protein, carbs and veggies all together. Done and done.

Cause y'all, the season I'm in with my teens, five minutes is sometimes all the time we've got before we need to eat! Hence this new series, cause I'm sure I'm not the only one.

Sidenote: Y'all know I don't judge. Nothing wrong with takeout or ordering in. Do what works. Or stay stocked with store-bought foods to make easy dinners. This saves me all the time.

Today though, it's all about the quick and easy last-minute meal when you walk in the door.

So let's get cooking.

Ingredients laid out in separate containers for making a chicken, mashed potato and pea recipe with gravy.
A glass container with creamy mashed potatoes.
A glass bowl with gravy.
A skillet filled with rotisserie chicken pieces and green peas being warmed through.
Dinner plates filled with mashed potatoes topped with chicken and peas and drizzled with gravy.

Ingredient Notes:

Chicken: This needs to be already cooked and ready to use for this recipe. You can use a rotisserie chicken or leftover grilled or baked chicken. It helps if it's already chopped or shredded to keep this to 5 minutes.

Mashed potatoes: To keep this fast, we are using the instant kind that comes in a bag, as flakes. You just boil some water and stir them in. You might also be able to find some mashed potato cups or prepared mashed potatoes that can heat quickly in the microwave.

Peas: Frozen peas are a staple in my house. They don't even need to be thawed for this recipe; they'll get warmed through in the pan in no time.

Gravy: You can find a small jar of gravy (8 ounces) in the grocery store. You could also buy a packet of gravy and make it, but that might add a little extra time.

Yup, this is just those 4 ingredients, plus some salt and pepper to taste, and you have a cozy, delicious dinner for four ready to go.

Whether it's teens or toddlers or work or any other number of activities and obligations, a super fast last-minute meal is a good one to have in your back pocket.

I hope this helps! Let me know in the comments below if you want to see more of these types of recipes. (I've got a couple of others in development right now, they're just not quite excellent enough to share. I'll keep working on them though.)

Enjoy!

XO,

Kathryn
