No coordination or multi-tasking needed, so it's great for those nights when your mental capacity is low.
The sausage pieces get browned and a little charred, while the potatoes and veggies get tender with crispy, roasted edges.
Seriously delicious.
These ingredients are simple and they work so well together.
Plus, everything is ready at the same time! And you only have your plates to clean up after dinner. I love that on a tired night!
Oh and it's gluten free and dairy free as is, so it works for a variety of needs.

Another bonus of this recipe is you can use it as a starting point and mix and match your favorites.
For example, I've made and loved this with a spicy chicken sausage and sweet potatoes for the potatoes.
Or use an Italian style chicken sausage for some extra Italian flavor. Gotta love options.

Recipe Notes:
Chicken sausage: You can swap in other flavors of smoked chicken sausage for the chicken apple sausage listed in the recipe. I've also made this with a sweet Italian chicken sausage and even a rotisserie seasoned kind and an andouille style chicken sausage. The chicken sausage should already be cooked. We are slicing and charring it in this recipe.
Quantity: You can also use this recipe and add another package of chicken sausage for some extra protein. I've done that before. However, you'll likely need a third sheet pan or a separate pan to roast in a toaster oven (which is what I do).
Potatoes: I love the cute little baby creamer potatoes for this recipe. They are buttery and delicious. Yukon potatoes work too, just cut them into small cubes. I've also made this sheet pan with sweet potatoes and if you love a little extra sweetness, you can use those.
Pepper: I love the sweetness and color of a red bell pepper, but an orange or yellow would be fine to use, too.

Chicken Sausage Sheet Pan
Ingredients
- 1 (12 oz) package smoked chicken apple sausage, sliced in ½-inch pieces (see notes)
- 12 oz. petit gold or baby creamer potatoes, cubed if large
- 1 red bell pepper, cut into small chunks
- 1 medium head of broccoli, cut into florets
- 2 tablespoons extra virgin olive oil
- ¾ teaspoon kosher salt
- ½ teaspoon paprika
- ½ teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
Instructions
- Preheat oven to 425 degrees F. Line two baking sheets with parchment paper (for easy clean up).
- Place the sliced chicken sausage and the bell pepper chunks in an even layer on one baking sheet.
- Place the broccoli and potatoes in an even layer on the second sheet pan. (Note: You can swap what is where on the baking sheets in this recipe; nothing gives off much liquid and it can all roast however fits best on your sheet pans.)
- In a small bowl, combine the seasonings: salt, paprika, Italian seasoning, garlic powder and black pepper.
- Drizzle the olive oil evenly over both baking sheets. Sprinkle the seasoning mixture over the potatoes and the vegetables (not the sausage). Toss the potatoes and veggies to evenly coat in the oil and seasoning mixture. Toss the sausage to evenly coat in the oil.
- Roast at 425 for 30 minutes, stirring each pan once around the 15-20 minute mark.
- Serve hot and enjoy!
