Something about spring and summer weather coming in makes me want to sit on the porch or in the backyard and sip on something pretty.
I mean, rarely is there time for such things, but I do try and gather with friends and family as much as possible to enjoy the weather.
Some favorites drinks for these occasions include Aperol Spritz and Pimm’s Cup, which gets loaded with fresh fruit and is so beautiful.
And if you know, you know I’m a bourbon girl through and through so I adore this spiked Arnold Palmer.
Today though, we’re going big and we’re going bubbly.
This elderflower champagne cocktail is a big batch drink that’s just perfect for serving to friends, family, neighbors, whoever is coming over!
It’s light and fresh and full of effervescent bubbles from the champagne.
Oh, and it’s only 3 ingredients! And less than 5 minutes to stir together. Can’t beat that!
It’s also super pretty. We’re using a rose champagne to add that pretty hue, and you can get fun and creative with your garnishes, using everything from fresh fruit to edible flowers.
Plus, it’s really well balanced - not too sweet.

Ingredient Notes
- Bubbly: I use a brut rose champagne for this drink. You could substitute a Prosecco or other type of bubbly, but the rose adds the pretty color, so I recommend using that.
- Brut: This adds just the right amount of sweetness. You could also use an extra dry, which, despite the name, actually has more residual sugar than brut and is a bit sweeter.
- Elderflower liqueur: I use and love St. Germain’s, but any good quality brand will work.
- Garnishes: Have fun with any sliced fruit or edible flowers you’d like to use to garnish this drink. I happen to think the strawberries go great and complement the flavors - and color - well.
- Ice cubes: You’ll want to serve this over ice. You could also make fun ice cubes with sliced fruit or edible flowers frozen right in them.
Tips and Tricks
Make sure the champagne and club soda are chilled before you mix everything together. It makes the drink much tastier.
Pour and stir this drink gently. The champagne will fizz and you don’t want to be too aggressive and have the drink go flat.
Serve immediately. The bubbly will go flat after the drink has sat for a while, so it’s best to make it when you are ready to serve it up.
This drink packs a little punch between the bubbly and the liqueur so sip slowly and responsibly.

This elderflower champagne cocktail is just 3 ingredients and comes out so light and fresh and bubbly! It’s perfect for sipping with friends on a warm spring or summer day.
Ingredients
- 1 bottle brut rose champagne, chilled
- 3 cups club soda or sparkling water, chilled
- 1 cup elderflower liqueur (such as St. Germain)
Instructions
- Pour all ingredients slowly into a large pitcher. Stir gently to combine (it will fizz and you don’t want to disrupt the bubbles too much).
- Pour the drink into wine glasses filled with ice.
- Top with sliced fruit or edible flowers, if desired, and enjoy!
