Sheet pan pork chops with potatoes and broccoli is an easy, all-in-one, hands off dinner that's well seasoned and delicious.

We are continuing my never-ending love for sheet pan dinners again today. (Recently I've shared sheet pan jambalaya and sheet pan chicken thighs with potatoes and green beans and I have tons more.)

Today's Cajun style sheet pan pork chops with potatoes and broccoli is a great all-in-one meal that's easy to prep and then hands off as it bakes away.

Everything is done at the same time and you have solved the dinner dilemma for yet another night. 

Plus, it's really just 4 ingredients, plus some olive oil and salt and pepper. Can't beat that for a full family dinner!

OK, let's get cooking.

Ingredient Notes:

Pork chops: We are using boneless pork chops that are about 1 inch thick. If you are using really thin pork chops or larger bone-in pork chops, the cook time will be different and you'll need to reconfigure how and when you start the different components.

Potatoes: I love the baby creamer potatoes for their flavor - and just how cute they are - but Yukon potatoes would work great as well. Just make sure everything is cut into about ½ inch cubes so it roasts evenly.

Broccoli: Roasted broccoli is one of my favorite ways to eat broccoli. It gets crispy and a little nutty. You could also swap in some sliced okra or green beans if you prefer.

Cajun seasoning: I use a homemade Cajun seasoning. Store bought is of course fine as well, but if yours lists salt as the first ingredient, you might want to skip the extra ¼ teaspoon salt on the pork chops and the potatoes.

Feel free, too, to adapt this recipe and swap out the Cajun seasoning for a different seasoning mix. You can give this recipe different flavors with just that simple change.

And be sure to line your baking sheets with either parchment paper or aluminum foil for easy clean up. That's yet another perk of a sheet pan dinner - you just have your plates to wash!

Ingredients

For the pork chops:

  • 4 boneless pork chops, about 1 inch thick
  • 1 teaspoon extra virgin olive oil
  • 1 tablespoon Cajun seasoning
  • ¼ teaspoon salt

For the broccoli:

  • 1 medium head broccoli, cut into florets
  • 1 tablespoon olive oil
  • Salt and pepper

For the potatoes:

  • 1 lb. baby creamer potatoes, halved (or Yukon potatoes, cut in 1 inch cubes)
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Cajun seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 425 degrees F. Line two baking sheets with parchment paper for easy clean up and set aside.
  • Season the pork chops on both sides with the Cajun seasoning. Place on one end of the first baking sheet. Drizzle evenly with the olive oil and sprinkle with the salt.
  • Toss the broccoli florets with the olive oil and season with salt and pepper. Spread into an even layer on the other side of the first baking sheet with the pork chops on it.
  • On the second baking sheet, toss the potatoes with the olive oil, Cajun seasoning, and salt and pepper. Spread into an even layer.
  • Place both baking sheets in the oven and roast at 425 for 25 minutes, until the pork is cooked to 140 degrees F.
  • Serve immediately and enjoy!

Notes

Leftovers, once cooled, will keep in the refrigerator for up to 4-5 days. Store in an airtight container. Slice the pork before reheating in the microwave so it reheats more quickly and evenly. You can also reheat in an oven or toaster oven if desired.
