Easy roasted balsamic salmon with Brussels sprouts and farro makes for a delicious and healthy weeknight dinner!

Salmon is my favorite fish, by far.

Easy BBQ salmon and southwest baked salmon are some of our go-to ways to make it. So quick, so easy.

That's sorta my style when it comes to dinners, weeknights or not.

And today's recipe for this easy balsamic salmon with Brussels sprouts and farro is perfect for a simple weeknight meal.

It's also loaded with super foods!

I mean, salmon with all those healthy fats plus the whole grains in the chewy farro and then the Brussels sprouts with all their nutrition in each little nugget... it's quite the trio!

And honestly, these are some of my very favorite foods. No wonder I wanted to put them all together!

You'll also appreciate the VERY short ingredient list. This is easy to tackle any time.

OK, let's go over a few quick tips and notes for how to make balsamic salmon with Brussels sprouts and farro.

Recipe Notes:

  • Salmon: The cook time for the salmon will depend on how thick it is. If yours is really thick, it'll take the full 30 minutes so it can roast right alongside the Brussels sprouts. If it's thin, you can start the sprouts and add the salmon so it roasts for 15 minutes.
  • Farro: I love the quick cooking farro at Trader Joe's. You can use another brand of use regular farro, just be sure to follow the package instructions for how to cook it.
  • Balsamic vinegar: It helps to use a good quality, delicious vinegar here. It doesn't have to be super fancy or expensive. I buy and love the Costco brand but any kind you love will work.
  • Leftovers: Any leftovers, once cooled, can be stored in the refrigerator for up to 2 days. (I don't like keeping leftover seafood after that.) Reheat in individual portions in the microwave until hot.

Balsamic Salmon and Brussels Sprouts with Farro

Easy roasted balsamic salmon and Brussels sprouts are served with farro for a delicious and healthy weeknight dinner!

Yield: 4 servings

Ingredients

For the salmon:

  • 4 (5-6 oz.) pieces of wild salmon filets
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons balsamic vinegar

For the Brussels sprouts:

  • 1 (1 lb.) package of Brussels sprouts, washed, trimmed and outer leaves removed - also, cut any medium or large sprouts in half or fourths so they’re all the same size
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons balsamic vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (can omit for less heat)

For the farro:

  • 1 (8-9 oz.) package of quick-cooking farro
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat oven to 400.
  • Place salmon filets skin-side down on a large piece of aluminum foil. Sprinkle evenly with salt and pepper, then drizzle with olive oil and balsamic vinegar. Fold up the sides of the aluminum foil to make foil packets and seal and crimp the tops, so the salmon is enclosed. Set aside.
  • On a large baking sheet, toss the Brussels sprouts with olive oil, balsamic vinegar, salt, pepper and red pepper flakes. Spread them out evenly around the edges of the baking sheet.
  • Place the salmon foil packet in the middle of the baking sheet.
  • Roast at 400 for 20-30 minutes, until the sprouts are tender and the salmon is cooked through. (See notes below.)
  • In the meantime, cook the farro according to package directions.
  • To serve, spoon the farro into a bowl and season with salt and pepper. Arrange the Brussels sprouts and salmon in the bowl. Drizzle with extra olive oil and balsamic vinegar, if desired, and serve!

Notes

    You are a multi-tasking machine, Kathryn! Seriously, wow - full-time work, two young kids and this amazing blog all at once (plus many other things, I'm sure). Not sure how you do it! All I can say is that that piece of salmon all to yourself was well deserved! We are also huge salmon fans in this house. We usually pick up four pieces of fresh Tasmanian salmon every Saturday at the farmers markets, so in my mind, weekends equal salmon time. It's a lovely food ritual that we really enjoy. Next time, I'll need to try your balsamic version 🙂

    I think my mouth is literally watering! I saw some gorgeous Salmon at the store and passed it up, but haven't been able to get it out of my mind and bow you HAD to go and post this! With Brussels and Farro, no less. I swear I could eat an entire bag of brussels for dinner, and nothing else and be perfectly happy!
