Breakfast Grilled Cheese

Today’s recipe is dedicated to my son.

He is my grilled cheese lover. It’s his usual request on weekends and in the summer when he’s eating lunch at home.

He also adores a breakfast sandwich. He always folds his eggs and bacon into his toast to eat in the mornings. 

And finally, if we have leftover bacon (a rarity, ha!), he wants it added to his grilled cheese at lunch.

So in honor of those, I created this breakfast grilled cheese for him.

(Also, he turns 9 tomorrow so it’s birthday appropriate to share it this week, too!)

It’s a grilled cheese sandwich with scrambled eggs and cooked, crispy bacon right in the middle.

And we’re using cheese on both sides of the bread. It gets extra cheesy and melty - and helps seal in the other ingredients. I mean, that’s just smart, right?

(Also smart are these breakfast quesadillas that he adores too. They use a clever hack from TikTok that makes them super easy to put together in the morning.)

You will want to sink your teeth into this sandwich all day long!

And in fact, I make it for him at lunch as often as I do for breakfast. It would also be fabulous for a breakfast for dinner meal.

The combo of the buttery browned bread, the super cheesy insides, the soft scrambled eggs and the crispy, salty bacon, oh my. So swoon-worthy!

So let’s get cooking!

Now, I’ve got some notes and tips coming up below on how to make breakfast grilled cheese. Just tryin’ to be helpful.

Notes on making a breakfast grilled cheese sandwich:

  • Bread: Feel free to use whatever kind of sandwich bread you have on hand - white, wheat, etc. It needs to be somewhat sturdy to handle this sandwich, but any kind is fine.
  • Cheese: We use American cheese slices for our cheese. It gets melted so well and tastes so good. You could also substitute cheddar or another cheese if you prefer. Just slice it thin so it gets melted before the bread browns too much.
  • Bacon: You’ll need 2-3 slices of bacon for your sandwich and it needs to be already cooked, so please plan accordingly. You can cook it on the stove, in the oven or in the microwave. (That’s what I do when it’s just a couple of slices - takes about 2 to 2 ½ minutes to cook 3 slices on high.)
  • Eggs: You also need to scramble your eggs so they are ready to add to your sandwich. I’ve not tried this with a fried egg, but you could certainly give it a shot.

As for servings, this recipe is written for a single sandwich. However, you can make two or more, however many you need.

Cause everyone is going to want one of these babies!

And trust me, they are super filling! This is a meal that will definitely hold you all morning long, no matter how busy the day looks.

Speaking of, because it’s so hearty, I don’t really feel like you need much else.

But if you did want to pair this with something, I’d suggest some fresh fruit. Nice and light.

Or if you’re making it as a breakfast-for-dinner night, you could also do something like this brunch salad of mixed greens with fruit to add some veggies.

And if you are a breakfast and brunch fanatic like we are, be sure to check out this classic sausage and egg casserole (hello, Christmas morning!) and this overnight French toast casserole. This veggie lovers quiche is a personal favorite so I can get in ALL the veggies.

Breakfast Grilled Cheese

Breakfast grilled cheese with melty cheese, soft scrambled eggs and crispy bacon is the ultimate breakfast sandwich and crazy delicious!

Yield: 1 sandwich

Ingredients

  • 2 slices of sandwich bread
  • 3 slices of American cheese
  • 2-3 slices of cooked bacon
  • 2 large eggs, scrambled
  • 2 tablespoons unsalted butter, divided

Instructions

  • This recipe requires the eggs and bacon to be cooked. Scramble the eggs until cooked. Season with salt and pepper. Cook the bacon and drain.
  • Assemble the sandwich. Place the American cheese on both pieces of bread (1 ½ slices of cheese per slice of bread).
  • Place the cooked bacon on one of the pieces of bread. Top with the scrambled eggs. Cover with the other piece of bread to make the sandwich.
  • Butter the top of the sandwich with about 1 tablespoon of butter.
  • Heat the remaining tablespoon of butter in a medium skillet over medium-high heat. Once melted, place the sandwich (buttered bread up, non buttered bread down) in the skillet. Cook for 2-3 minutes, until the bottom piece of bread is browned and the bottom cheese has started melting.
  • Carefully flip the sandwich over and press down with a spatula. Cook another 1-2 minutes until the bread is browned and the cheese is melty.
  • Serve immediately!

    I tried mayo on the outside of the bread in place of butter and WOW. I will never go back again. I think this was a Martha Stewart recommendation. I still put a little butter in the pan but the mayo on the outside is 👌
