Getting a healthy, home cooked meal on the table every night can be challenging. Particularly with the demands of work, school, activities and social obligations, well, it can be the last thing we want to do at the end of the day. So I’ve got tons of easy chicken recipes at my disposal that I turn to when I need to whip something up for us on one of those busy weeknights. (Or even busy weekends – dinners can be tough then, too!) And this collection of easy chicken dinner recipes has some that we make over and over again. It includes everything from skillet chicken dinners to slow cooker chicken recipes, one-pot chicken pastas, soups and salads with chicken, chicken burgers and meatballs, sheet pan chicken dinners and easy chicken casseroles. Are you looking for fast as well as easy? Me too. I’ve got collections of chicken recipes in under 30 minutes and, faster still, chicken recipes in under 15 minutes. • Easy Chicken Recipes with Few IngredientsThese easy chicken recipes with few ingredients include some great healthy lunch and dinner options, all made with 5 or fewer ingredients! I am all about the EASY when it comes to cooking. I don’t like to fuss much over my food and I certainly don’t like to spend a ton of time in the kitchen at the end of a long day. Easy chicken dinner recipes and healthy lunch recipes with chicken are much more my style. (As are chicken recipes in under 30 minutes and, faster yet, chicken recipes in under 15 minutes. Cause life.) Speaking of life, a million trips to the grocery store also aren’t fun during a busy week. (Especially with little ones in tow!) So I’ve got these go-to easy chicken recipes with few ingredients that help me keep dinnertime simple. And my sanity intact. In fact, one of the first cookbooks I bought on my own, at a used bookstore in Washington, D.C., where I lived for a few years after college, was titled 3-ingredient recipes. I was pretty new to cooking and thought, I think I can handle that. My cooking skills have improved, but I still go for the simple chicken recipes…

You’ve probably noticed by now we eat a lot of different forms of oats and oatmeal around here. Happily guilty as charged.

(I even made a whole category of healthy oatmeal recipes if you want to go browse and get some inspiration!)

Overnight oats are a weekly staple.

I make them every.single.Sunday. Without fail.

If we travel (like this week when we are on spring break!), oatmeal jars come with us. The kiddos have come to know what day of the week it is based on what variety of overnight oatmeal jar they have for breakfast.

OK, that may be a little weird, but it’s just how we work. #gowithit

We started with these 3 favorites and they will forever be classics in our house, but of course, I like to explore a bit and try new things.

My recent obsession has been strawberry overnight oats.

Because, well, strawberry season. 🍓❤️

I try to go overboard on strawberries in the spring so I *almost* get sick of them and am not so sad when they suddenly double in price and I stop buying them. But I’m usually still a little sad…

Anyway, here are my two favorites strawberry overnight oatmeal jars to share with you today.

Strawberry chocolate overnight oats

These have cocoa powder mixed in and mini chocolate chips throughout for a double hit of chocolate in the morning. It’s my favorite. I even let the kiddos have this one and they are smitten too.

Notes on strawberry chocolate overnight oatmeal jars:

  • The strawberries, as long as they aren’t overripe, can be added when you’re mixing up the jars and will be fine for 3-4 days. (If yours are super ripe already, either eat the oatmeal jar the next day or stir them into the jars in the morning right before you eat it.)
  • The mini chocolate chips can also be added in when you are mixing everything together. If you eat your jar the next day, they will still be a little bit hard. By the second day, they have softened in the mixture and you taste their sweetness but not their texture. I prefer them this way.

Strawberry banana overnight oats

I also had to try a strawberry and banana version because those two fruits just go so well together. The soft, creamy banana and the juicy, red strawberries just love cozying up. And they are perfect in the mornings.

Notes on strawberry banana overnight oatmeal jars:

  • Same deal with the strawberries — add them when you’re mixing or when you’re eating. See above.
  • The banana can be added in three ways (I’ve tried all of these). You can:
  1. Slice or dice the banana and add it when you are mixing the jars. If you do this, just be sure to stir the banana pieces into the mixture really well and make sure they are completely covered. Any bananas sticking up at the top of the jar will start to turn brown by morning. Also make sure to eat the jar the next day. After that, any of the bananas risk browning. Or you can…
  2. Slice or dice your bananas and add them in the morning before you eat the jar. Or…
  3. You can mash up your banana and stir the puree into the jars. You’ll use about half of a small banana per jar. Mix it well and it will be good to go in the morning. But again, don’t wait longer than that or it could turn brown.

And there you have it!

Strawberry overnight oats will add some new jars to our regular rotation. My kids are gonna be so confused on what day it is. 😜

Enjoy!

XO,

Kathryn

I’ve never tried overnight oats! I know…I’m probably the last person on earth. It’s on my “to try” list, though, and this recipe looks great! Question: Do you think it would still be good without the yogurt? My daughter is allergic to dairy.

Definitely give them a try Alyssa! They are really delicious and make our mornings so easy 🙂 My daughter was allergic to cow’s milk until last year (outgrew it at age 4) and I made oatmeal jars for her with soy milk and plain goat’s milk yogurt. We bought ours at Trader Joe’s and she loved it (still prefers it). You could also substitute coconut milk yogurt though it definitely has a bit of flavor to it. Or if you want to skip the yogurt, I’d suggest increasing the milk to 1/2 cup and maybe adding another teaspoon of chia seeds to help it thicken up and have a good consistency. Would love to hear if you try it!
I also have a post on our experience with her milk allergy if that’s helpful for you: http://www.familyfoodonthetable.com/milk-allergy-in-toddlers-and-young-children/

I think I’ll go for the chocolate version because…well, chocolate! Those mini chocolate chips are just way too adorable, but the banana version sounds delicious too.

Those look delicious. I have never been a fan of oatmeal, however, I think I might really enjoy these!

Hi, I made the first recipe with Nudie coyo, some store-brand long-life coconut milk, Sweet William chocolate chips and agave nectar in place of the relevant ingredients. I want to make this again!

Hi kathryn, I was wondering if ground flax seed would be ok instead of chia seed? And also would using instant oatmeal work the same? Or should i get some regular oats? By the way, Love reading your recipes there so delicious and wonderful!!! Xo

Hi Krista! I don’t think ground flax seeds help thicken up liquids the same way chia seeds do so the texture might be a bit different if you substitute those. But you could certainly try it! Also, I’ve never tried these with instant oats but I think that would work fine because they would break down and be softened. Hope that helps! 🙂

Hi Vivien! Overnight oats are meant to be eaten cold, straight from the fridge. (Don’t worry – it’s not like eating cold oatmeal… these are creamy and fruity and delicious!)

2 questions: what size jar are you using, and do you leave the lid on overnight? Also, what is the calorie count?

Hi Sandi! Yes, you leave the lids on the jars overnight in the fridge. I use an 8 oz. size jar (like these: http://www.amazon.com/gp/product/B00HNPNNLS/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00HNPNNLS&linkCode=as2&tag=famfooontheta-20&linkId=MZDPBSVSD3DU7C4V – also linked to in the recipe card). The calorie count will vary depending on which type you make but they are about 250-300 calories per jar. I hope that helps and I hope you enjoy these!

These look great. Most of the recipes I have come across come for 1/2 cup of oats, plus banana and strawberries on top of that….the carbs and calories go creeping way up! I am going to try this version and then I will have room for a hard egg or sausage on the side.

I hope you enjoy them Angela! I’m with you – I’m glad these are on the smaller side and if it doesn’t fill me up for the morning, I can pair with something else small (and savory!)

Good morning – do you think I could get away with using quick oats for this recipe? We have a ton at home and I’d like to use them up. 🙂

Hi Mackenzie, yes, I think that would be fine! They will soften faster than regular oats and you may want a little less milk (or a little more quick oats) to balance the texture difference, but they should work. (Also, stay tuned because I have a peanut butter oatmeal cookie recipe coming soon that uses quick oats!) Hope you enjoy them!
