I know, not something you usually say about a Monday but this one includes chocolate, so I felt it was OK. Chocolate does that to me. Especially chocolate in the morning...
But first, a quick weekend recap:
- The daddy-daughter dance was a bit of a disaster. I think the pictures I took were the best part M (who's 5) was just not into it. Her friends tried to get her to dance but she didn't like that it was all up on the stage. And so she clung to my husband the whole time and hardly cracked a smile, he said. I think she was worn out and over-stimulated with all the music and people. Poor thing came home in tears Maybe next year will go better...
- We had some neighbors over yesterday for a little pre-Valentine's brunch. It was a ton of fun and we went through an embarrassing number of champagne bottles.
- I got a manicure and a pedicure. For some of you, this may not be worth mentioning but it almost NEVER happens in my life so it's kind-of exciting. I went with purple on my toes, of course.
- I did a Facebook Live video on Saturday with two healthier chocolate treats. My daughter joined me in the kitchen for this one and we had so much fun!
And today, more chocolate!
I have a well-documented love of a little chocolate at breakfast (within reason, of course). My healthy chocolate pancakes and my wholesome, warm chocolate breakfast oatmeal are two favorites.
And today, just in time for Valentine’s Day, I’m bringing you THREE ways to fix chocolate overnight oats!
So, we don’t really celebrate Valentine’s Day, my husband and I. We don’t even give each other cards. It's just not our holiday.
But with the kids, we’ve been cutting out hearts and making cards and doing crafts and sending Valentine’s to family near and far for weeks. ALL about it!
So in terms of a romantic evening, I usually just try and make a semi-nice dinner for the two of us after the kids go to bed and call it a night. #oldmarriedcouple
But this year, we lucked into tickets to go see the Curious Incident of the Dog in Nighttime (thanks Mom and Dad!). I read the book years ago and when I heard it had made it to the stage, I was so intrigued about how it might be performed.
And tomorrow night, I’ll find out! It’s not especially romantic, but with two little ones at home, any night out alone is a treat!
Speaking of treats, these cold, creamy, chocolate-laced jars are perfect for starting off your Valentine’s Day right! Cause I may not be into the mushy cards, but I can get on board with eating chocolate all day long!
These chocolate overnight oats are great for a decadent, special breakfast but they’re sweet enough to enjoy as a ready-to-go dessert. Curl up in front of the fire if it’s chilly and tuck into one of these!
Only question is, which to choose and where to start?! These are the difficult decisions of my life…
Notes on chocolate overnight oats:
- I prefer the brownie batter overnight oats jar topped with some fresh fruit - banana slices, diced strawberries or any other berry you have on hand. (And yes, this one is a little similar to the chocolate version of my strawberry overnight oats.)
- The mini chocolate chips in the brownie batter and oatmeal chocolate chip cookie jars will still be a bit firm if you eat these jars the day after you make them. But if you wait another day, they have softened in the creamy oatmeal mixture.
- If you’re thinking you might want to warm these up, so did I. I tried it with the oatmeal chocolate chip cookie jar, thinking it might be like a warm cookie kinda taste, but no. It just became liquidy again and the substance/texture wasn’t there. Now I stick to eating them cold, like with all overnight oatmeal, and I am oh so happy about it!
FYI, I use 8 oz. (half-pint) canning jars that I got as a set from Amazon. They are great for these oatmeal jars and I also use them all the time for homemade salad dressings.
I also like these plastic lids because they’re easier to clean than the metal ones that come with the jars.

Chocolate overnight oats, 3 ways
Check out these 3 different types of chocolate overnight oats to enjoy as a sweet morning treat or late-night snack!
Ingredients
Brownie batter overnight oats:
- ¼ cup oats, old-fashioned
- 1 teaspoon chia seeds
- 2 teaspoons honey
- 2 teaspoons mini chocolate chips
- 1 teaspoon cocoa powder
- ⅓ cup milk, skim, 2%, soy - any are fine!
- ¼ cup plain Greek yogurt, non-fat
- ½ teaspoon vanilla
- ¼ cup fresh sliced fruit for serving: strawberries, banana slices, etc.
Oatmeal chocolate chip cookie overnight oats:
- ¼ cup oats, old fashioned
- 1 teaspoon chia seeds
- 2 teaspoons light brown sugar
- 1 tablespoon mini chocolate chips
- ⅓ cup milk, skim, 2%, soy - any are fine!
- ¼ cup plain Greek yogurt, non-fat
- ½ teaspoon vanilla
S’mores overnight oats:
- ¼ cup oats, old fashioned
- 1 teaspoon chia seeds
- 1 teaspoon honey
- 1 tablespoon chocolate-hazelnut spread (such as Nutella)
- ⅓ cup milk, skim, 2%, soy - any are fine!
- ¼ cup plain Greek yogurt, non-fat
- ½ teaspoon vanilla
for serving with the s'mores overnight oats:
- 1 tablespoon mini marshmallows
- 1 tablespoon graham cracker crumbs
Instructions
- Combine all ingredients, minus any toppings to add when serving, in a small jar and mix very well.
- Cover and refrigerate overnight (and up to 5 days).
- When ready to serve, add toppings and any desired fruit and enjoy cold!
Notes
Each recipe is for 1 oatmeal jar. Make as many jars as you like!

Hi Valerie! Ha, no, sorry that was not correct. (I changed recipe cards and added nutritional information after I had posted this recipe, so I didn't see that it was calculating for one of each jar!) It's now fixed but the calculation is still an estimate - it's calculating it for all of them together and divided by three. Each individual jar will be slightly different.
