It seems so strange to me that summer is coming to an end. I suppose because it's been such a strange summer.
Luckily, we had a lot of fun family time, including a few beach trips, so I'll hold on to those great memories. And try to wrap my head around back-to-school season and whatever that might bring this fall. ????
But let's talk food instead. Much nicer.
I mentioned recently in my recipe for easy baked chicken thighs that I’m a newish convert to the deliciousness of chicken thighs.
They have such a rich flavor! (I also recently shared Instant Pot lemon chicken, which uses chicken thighs and comes with such a delicious sauce!)
Today, I’m celebrating my new favorite cut of chicken with these Dijon Air Fryer chicken thighs.
They are perfectly seasoned, slathered with Dijon mustard and cooked in the Air Fryer until tender, juicy and browned.
Super simple ingredients but really flavorful results!
I also love that this is a really easy, hands-off recipe. Just 5 minutes to prep and 20 minutes total, which makes this a great option for an easy chicken thigh recipe for a weeknight meal.
OK, let’s get cooking.
Now, I’ve got some notes and tips coming up below on how to make Air Fryer chicken thighs. Just tryin’ to be helpful.

Notes on Dijon Air Fryer chicken thighs:
- The recipe calls for boneless, skinless chicken thighs. If you are using bone-in, you’ll need to increase the cooking time to ensure they cook through all the way. I have specifics in the recipe card.
- The serving size is about 1-2 chicken thighs per person. However, only about 4 thighs will fit in an Air Fryer at once. If you want to make more than that, you can keep extras warm on a plate covered with aluminum foil or in an oven at a low temperature.
- Poultry seasoning is a great mix of herbs that adds a TON of flavor. You can buy it in a little container in the spice aisle and it typically contains thyme, sage, marjoram, rosemary, black pepper and nutmeg.
- Or, if you don’t have any or want to buy any, use a blend of sage, thyme and rosemary.
As is, this recipe is gluten-free and low-carb (as well as dairy-free), but you could sprinkle the tops of the Dijon brushed chicken thighs with some breadcrumbs if you’d like. It would give it a bit more of a crunchy, breaded exterior.
Some Air Fryer recipes require you to flip the food over half-way through. I’ve found that isn’t necessary with this dish, so it’s completely hands-off the whole time it’s cooking. ????
Oh, and my Air Fryer doesn’t have or require a pre-heat, but I included a note in the recipe card below in case yours does.
By the way, this is the Air Fryer I have, and I have loved it! It’s so easy to use and to clean up too!
How long do chicken thighs take in an Air Fryer?
- You can cook boneless, skinless chicken thighs in an Air Fryer at 375 for 15-18 minutes. If you are using bone-in chicken thighs, increase the cook time to 22-25 minutes.
I have, use and recommend a digital thermometer to test meat to ensure it’s properly cooked.
No Air Fryer? You can still make this recipe and bake the chicken thighs in the oven instead.
Bake at 400 for about 25 minutes, until a digital thermometer reads 165. (Tip: Line your baking sheet with foil and spray with cooking spray for easy clean-up.)
OK, let’s round out this meal so we can get ready to eat!
What to serve with chicken thighs:
- You can serve this chicken with baked or mashed potatoes, steamed rice or creamy polenta. Pasta would work too. This easy stovetop mac and cheese is ready in just 15 minutes.
- For a vegetable, do a simple steamed broccoli or asparagus. Or roast some veggies in the oven while the chicken is cooking.
- You could also do a side salad to keep things simple.
- If you want some more exciting sides, here’s a few other ideas: Make a colorful Caprese pasta salad, confetti brown rice, a creamy mashed cauliflower casserole, kid-friendly cheesy zucchini brown rice, or a big Mediterranean quinoa salad.
The beauty of a simple main dish like this is you can pair it with just about anything! And because it’s so hands-off, you can focus that time on your other sides.
Or you can just pour a glass of wine and enjoy a few (hopefully quiet) minutes in the kitchen. ????
Finally, a couple notes about any leftovers you might be lucky enough to have.
Leftover baked chicken thighs will keep, once cooled, in a covered container in the refrigerator for up to 4-5 days.
Slice them and use for sandwiches, wraps, grain bowls and more.

Dijon Air Fryer chicken thighs
Dijon Air Fryer chicken thighs are perfectly seasoned, slathered with Dijon mustard and cooked in the Air Fryer until tender, juicy and browned.
Ingredients
- 1 lb. boneless, skinless chicken thighs
- ¾ teaspoon poultry seasoning (see notes)
- ¾ teaspoon paprika
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 2 tablespoons Dijon mustard
Instructions
- Preheat the Air Fryer to 375 (if preheat is required).
- In a small bowl, combine the poultry seasoning, paprika, salt and pepper.
- Season the chicken thighs all over with the seasoning mixture and place in the Air Fryer tray. Dollop about ½ tablespoon of Dijon mustard on the top of each chicken thigh and brush evenly over the top of each one.
- Close the Air Fryer and set to cook at 375 for 15-18 minutes. (If using bone-in thighs, increase cook time to 22-25 minutes.) Use a digital thermometer to check that the chicken thighs have reached an internal temperature of 165. If not, add another 1-2 minutes of cook time.
- Serve hot and enjoy!
