I hope you have a long and luxurious day stretched out in front of you.

Or you can join me in the frantic errands and laundry and prepping and whatnot rush that is the last day of the weekend.

And in that vein...

Today I’m bringing you another dinnertime solution, rather than a recipe.

These Mrs. Paul’s Lemon Herb Shrimp Seafood and Veggie Meals are the perfect convenient meal kit to have on hand. They are protein-packed, full of nutritious ingredients and steamed and ready to go in under 10 minutes!

Having tasty, ready-to-go meals like this tucked in the freezer makes it so much easier to stay on track with healthy eating.

Even on the busiest days, you can come home and pop this bag in the microwave and be sitting down to a hot, delicious, well-rounded, restaurant-quality meal in under 10 minutes.

You seriously can’t beat that!

Oh, except that it’s also totally delicious. The sauce with this shrimp and veggies is light and lemony and coats all of the ingredients perfectly.

And the barley makes the whole dish seem beautifully creamy. I love how barley does that.

Plus, as a health and nutrition editor, I know how important it is to eat seafood on the regular.

I’m always aiming for 2 servings a week, which is the recommended minimum, and it helps to have on-hand solutions.

Especially if you are a little timid about cooking seafood or don’t know what to do with it, these meal kit bags from Mrs. Paul’s (that you can find at Walmart) are the perfect answer!

Each bag contains 2 servings (so get a couple of bags if you are serving more than 2 people) and while they may first appear to be on the small size, they are hearty.

There’s TONS of shrimp in these bags and the whole grain barley brings substance and those chickpeas add even more protein.

But if you wanted to bulk it up a little more, you could always serve this with extra barley or beans, some crusty bread, or add a side salad to go along with it.

Ingredients

  • 1 (19 oz.) bag Mrs. Paul’s Lemon Herb Shrimp with Barley, Chickpeas, Sweet Potato and Kale

Instructions

  • Prepare according to package directions. (I used the recommended microwave method.)
  • Serve hot and enjoy!

Notes

This shrimp and veggies dinner is hearty on its own, but you could always serve this with extra barley or beans, some crusty bread, a sprinkle of Parmesan, or add a side salad to go along with it.
