Oh, except that it’s also totally delicious. The sauce with this shrimp and veggies is light and lemony and coats all of the ingredients perfectly.
And the barley makes the whole dish seem beautifully creamy. I love how barley does that.
Plus, as a health and nutrition editor, I know how important it is to eat seafood on the regular.
I’m always aiming for 2 servings a week, which is the recommended minimum, and it helps to have on-hand solutions.
