    • Easy Chicken Dinner Recipes -->This collection of easy chicken dinner recipes features some of our favorite family dishes, perfect for making a healthy, delicious home cooked meal on a busy night! Getting a healthy, home cooked meal on the table every night can be challenging. Particularly with the demands of work, school, activities and social obligations, well, it can be the last thing we want to do at the end of the day. So I’ve got tons of easy chicken recipes at my disposal that I turn to when I need to whip something up for us on one of those busy weeknights. (Or even busy weekends – dinners can be tough then, too!) And this collection of easy chicken dinner recipes has some that we make over and over again. It includes everything from skillet chicken dinners to slow cooker chicken recipes, one-pot chicken pastas, soups and salads with chicken, chicken burgers and meatballs, sheet pan chicken dinners and easy chicken casseroles. Are you looking for fast as well as easy? Me too. I’ve got collections of chicken recipes in under 30 minutes and, faster still, chicken recipes in under 15 minutes. • Easy Chicken Recipes with Few IngredientsThese easy chicken recipes with few ingredients include some great healthy lunch and dinner options, all made with 5 or fewer ingredients! I am all about the EASY when it comes to cooking. I don’t like to fuss much over my food and I certainly don’t like to spend a ton of time in the kitchen at the end of a long day. Easy chicken dinner recipes and healthy lunch recipes with chicken are much more my style. (As are chicken recipes in under 30 minutes and, faster yet, chicken recipes in under 15 minutes. Cause life.) Speaking of life, a million trips to the grocery store also aren’t fun during a busy week. (Especially with little ones in tow!) So I’ve got these go-to easy chicken recipes with few ingredients that help me keep dinnertime simple. And my sanity intact. In fact, one of the first cookbooks I bought on my own, at a used bookstore in Washington, D.C., where I lived for a few years after college, was titled 3-ingredient recipes. I was pretty new to cooking and thought, I think I can handle that. My cooking skills have improved, but I still go for the simple chicken recipes…

These three easy Greek yogurt dips — two savory and one sweet — are great for a healthy snack or appetizer and take just minutes to mix together!Three bowls with different Greek yogurt dips arranged on plates with various fruit, veggies and other dippers for snacking

This post is sponsored by the American Dairy Association Mideast. As always, all thoughts and opinions are my own.

Y’all know I am a huge fan of Greek yogurt, right?

I’ve always got multiple versions on hand in the refrigerator – small containers for my husband at breakfast, vanilla versions for my son and I, and at least one huge container for cooking and as a topping off dishes.

I’ve made fruit mixes for yogurt for my kids since they were babies — and we’re doing a version of that today.

We also make tons of yogurt parfaits for breakfast, use Greek yogurt in mango yogurt popsicles and even bake with it — see my strawberry yogurt cake and healthy blueberry cake.

We also use it as a substitute for sour cream when we’re topping tacos and fajitas, or for mixing it to chicken or tuna salad.

Today, it’s taking center stage in these easy Greek yogurt dips. We’ve got two savory and one sweet.

Here’s what we’re making:

  1. Pesto yogurt dip
  2. Creamy chili dip
  3. Fruity yogurt dip

Something for everyone!

These quick dips are just a few ingredients, take minutes to mix together, and are perfect for setting out on a snack board for a healthy appetizer. (Or really load up your snack board and call it dinner!)

You can’t beat an easy, creamy, flavorful dip that has everyone wanting to snack on some healthy foods.

I’m also so happy to be partnering again with the American Dairy Association Mideast to share some healthy recipes this year, especially ones like this that focus on plant-based pairings for dairy.

(See my smashed chickpea salad for an earlier post celebrating dairy + plants.)

You know I love to get in some extra fruits and veggies whenever I can!

And Greek yogurt is such a nutritional powerhouse. ❤️

Nutrition tips on Greek yogurt:

  • Greek yogurt is high in protein, which helps us feel full longer, and it’s got dairy’s 9 essential nutrients: calcium, potassium, phosphorus, protein, vitamins A, D and B12, riboflavin and niacin.
  • A serving of 6 oz of Greek yogurt can provide up to 17 grams of protein and 14% of your daily calcium needs, while only being about 100 calories.
  • Greek yogurt is also packed with probiotics, which are healthy bacteria that can help boost your immune system and create a healthy microbiome, which impacts our digestive system and so much more.

Plus, it’s got that great creaminess and tang.

AND, on top of that, it’s National Dairy Month right now for June.

It’s a month dedicated to celebrating America’s dairy farmers, who work hard to help provide wholesome, nutritious, affordable food to our families and communities.

These farmers work tirelessly day in and day out to care for their animals and produce healthy dairy foods. And they’re working even harder right now to keep our grocery stores stocked with fresh dairy foods.

Fun fact: In Ohio and West Virginia, cows on about 1,800 dairy farms produce about 649 MILLION gallons of milk each year. 😮

OK, enough geeking out! Let’s get moving on the dips though, so we can start enjoying them sooner.

Now, I’ve got some notes and tips coming up below on how to make these Greek yogurt dips. Just tryin’ to be helpful.

If you want to jump on down to the recipes, simply scroll right on through the rest of the text. The recipe card is near the bottom of the page, above the comments section.

Notes on making Greek yogurt dips:

  • You can use nonfat, 2% or 5% plain Greek yogurt; whatever you have on hand.
  • The pesto dip calls for pesto. I love using homemade basil pesto but you could substitute a store-bought variety as well.
  • Use strawberries or a mixed berry combination for the fruit in the fruity yogurt dip. Or feel free to substitute mangoes or another favorite fruit to change up the flavor of the dip.
  • You could substitute a vanilla Greek yogurt or add a touch of honey to the fruity yogurt dip if you want to sweeten it up a bit.
  • You can also add extra pesto or fruit puree to your dips if you want to amp up those flavors even more.
  • Also, beware that the chili dip is spicy! 🌶 You can omit the adobo chili and just use some of the sauce if you want to tame the heat.

Let’s also talk storage and leftovers if you have extras.

What to do with leftover Greek yogurt dips:

– Leftovers of each of these dips may be stored, covered, in the refrigerator for up to a week.

– You can serve them again as a dip for an appetizer.

– You can also use the pesto dip and creamy chili dip to baste onto grilled chicken or meats. They’d be great with roasted shrimp too.

– Or use these as a spread for a wrap or sandwich.

– Or add a dollop of one of the savory dips as a creamy topping to a grain bowl.

So many ways to enjoy these!

Finally, you may also want to check out my creamy peanut butter yogurt dip. It’s another great sweet dip for after-school snacking with some fruit and graham crackers.

I can’t wait to hear which of these Greek yogurt dips you try and which ones your family likes best. Leave me a comment below or tag me on Instagram; I love seeing your creations. 😊

Enjoy!

XO,

Kathryn
