Curried ground chicken skillet with mushrooms, spinach and diced tomatoes is a flavor-packed and healthy one-pot dinner ready in just 20 minutes!

Today's recipe is a mash-up of sorts between two long-time favorites of mine.
We're combining this curry ground turkey with rice and peas and my quick chicken curry. These are flavors I adore and I'm always looking for more ways to use them.
This curried ground chicken skillet with mushrooms, spinach and diced tomatoes is the answer.
And y'all, it's just one pan and ready in 20 minutes! Weeknight dinner winner right here!
I love, too, that I can get a little bit of everything in every bite. And that mix of spices adds so much depth of flavor to the dish.
Plus, there are tons of ways to swap things in and different options for serving this up. Keep reading below for the details.

Ingredient Notes:
Chicken: I prefer the regular ground chicken, about 90% lean, not ground chicken breast. The regular one has a bit more fat and flavor. You could also try this with ground turkey if you prefer.
Mushrooms: Cremini or baby Bella mushrooms work great here and have some extra flavor. Regular white button mushrooms could be substituted as well.
Tomatoes: I use a can of regular diced tomatoes. You could also substitute petit diced tomatoes or try fire-roasted diced tomatoes for some extra oomph.
Spinach: I've always got fresh spinach on hand, so I usually wilt that in as the veggie, as written in the recipe card. However, I've also substituted about a cup of frozen peas to warm through and those pair great too. Pick your favorite.
Additional add-ins: You could add in a can (rinsed and drained) of chickpeas if you want to bulk this up a bit more.
I also highly recommend adding some chopped fresh cilantro for serving. (Substitute chopped fresh flat leaf parsley if you are a cilantro hater.) And I love some chopped peanuts on top for a little crunch and texture.

As far as serving, I've got a few options for you.
Serving IDeas:
Serve as is, or with cauliflower rice, for a low-carb meal.
Serve over steamed brown or white rice (that's my go-to way).
Pair with some warm naan or pita bread and call it a day.
You could also serve this ground chicken mixture over baked sweet potatoes for a fun flavor contrast.

Curried Ground Chicken Skillet
Ingredients
- 1 teaspoon extra-virgin olive oil
- 1 small onion, diced small
- 1 (8 oz) container cremini mushrooms, diced
- 2 cloves garlic, minced
- 1 lb. lean ground chicken (I use 90% lean)
- 1 tablespoon curry powder or garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon kosher salt
- ½ teaspoon turmeric
- ½ teaspoon ground ginger
- 1 (14.5 oz.) can diced tomatoes (undrained)
- 2 cups fresh baby spinach
For serving:
- ¼ cup chopped fresh parsley or cilantro
- Chopped peanuts (optional)
- Steamed white or brown rice (see notes)
Instructions
- Heat a large skillet over medium heat and add olive oil.
- Add onion and mushrooms and sauté for 5 minutes, until softened. Add garlic and cook another minute.
- Add ground chicken to the pan and cook until cooked all the way through, about 7-8 minutes, breaking it up with a spatula as it cooks.
- Add the curry, cumin, coriander, salt, turmeric and ginger and stir well to combine.
- Stir in the tomatoes and spinach until warmed through and lightly wilted, 2-3 minutes.
- Serve the curried chicken over steamed rice. Sprinkle with fresh parsley or cilantro and peanuts, if using, and enjoy!
